This is an old family recipe my gran would make for
Sunday tea’s and she had it when she was a child too!
Pandora’s slices
Line a swiss roll tin with 375gshort crust pastry -
bake blind and allow to cool and spread with rasp jam.
in a food processor whizz - 250g caster sugar, 75g
ground almonds, 75g des coconut and 200g soft butter.
When combined add 2 large eggs, 150g rice flour,
250g sultanas, 100g glace cherries.
When combined pour the mixture over the jam, smooth
and bake for 40 mins at 180C until golden.
Cool and cut into 16-20 slices.
